Though deep-fried mozzarella balls was a rather basic recipe to choose, the promise of a hot, crunchy, cheesy snack was too much to resist. Founded by Victor Lugger and Tigrane Seydoux, Big Mamma serves an Italian cuisine that is contemporary, affordable, and made by a team of real Italians. If we really had to choose a dish that has that 'wow' factor, it would probably be the lemon tart with its 20cm tall meringue. Preparation time is, in fact, anything that happens that doesn’t involve heat; cooking time the inverse. Funnily you guys have a recipe for the pizza dough but your flour quantity is different to page 108 in the book !Big Mamma plans to fill the world with the tastes and aromas of Italy, one restaurant and one cookbook at a time.
